This is the tastiest banana bread I’ve ever had and it’s completely refined sugar-free and diary-free. The video also includes a vegan alternative.
This is always a winner in our family house, especially on a cold winter’s day.
Enjoy!
Deliciously Moist Refined Sugar-free Banana Bread Recipe:
Ingredients
Wet Ingredients:
• 1.5 cups mashed bananas (about 4 ripe medium-sized ones)
• 1/4 cup rapeseed oil
• 2 large swirls of agave syrup
• 2 large eggs (or two flax seed eggs, if vegan)
• 1 teaspoon vanilla
Dry Ingredients :
• 1 & 3/4 cups self raising whole wheat flour ( you can use different flour if you prefer)
• 2 tablespoons cornstarch
• 1 teaspoon baking powder
• 1/2 teaspoon allspice
• 3/4 teaspoon ground nutmeg
• 1/2 teaspoon ginger
• 1/4 teaspoon salt
Instructions:
Prep: Pre-heat oven to approx 180 degrees, in a fan oven. Line a bread loaf pan (approx 4×8 inches) with baking paper. Mash the bananas, in a large bowl, until you have a gooey consistency and most of the lumps have gone. Add the eggs to the bananas and whisk. Then add at the other wet ingredients and mix until all combined. Next add the dry ingredients to the wet ingredients, starting with the flour - make sure to sieve the flour. When they have been added, FOLD in the dry ingredients until combined. Use a spoon, spatula or wooden spoon. Do NOT whisk the ingredients together! Transfer mixture to the prepared bread pan, and place sliced bananas carefully on top. Bake in hot oven for 50 minutes, or until a toothpick comes out just clean (it may need an extra 15 mins depending on your oven). When you have taken it out of the oven, peel off baking paper carefully, and cool until comfortable to the touch. Best served warm. Enjoy! 😋
